Out the Box – Breakfast for Dinner

Have you ever had one of those days where not budget or diet could inspire you to cook your own food, and the lure of a takeaway was stronger than any of your common sense? Well, we had just such a day this week.

I was just about to pick up the phone to place an order when I thought I would give the fridge one final chance.  Our Able  and Cole delivery this week had included a beautiful fresh lettuce, some cherry tomatoes, potatoes, and our usual additional order of  a dozen eggs.

I whipped up the eggs in the frying pan as a quick omelette and stuffed it with random leftover bits from the fridge: some gherkins, peppadews, cheese and bacon left from breakfast. I chopped the potatoes in to chips, or French fries, and baked them in the oven for a few minutes and shredded parmesan cheese over the lettuce and tomatoes for a side salad, dressed with a delicious 12 year old balsamic and a good quality olive oil.

All in all, the food took about 15 minutes to prepare – less time than the trip to the takeaway would have taken, budget friendly and great for using up bits and pieces from the fridge and the veggie bowl.
